Students enjoy a ‘hands-on’ approach when it comes to learning about the Baking industry. Students have the opportunity to gain key skills and practice in filling and forming pastries, production of bread products, cake & cookie production as well as cake decoration. If successful in their assessments students will gain the nationally recognised qualification –

FDF20111 Certificate II in Food Processing – Tailored as an introduction to the Baking Industry.

A wide range of products are produced to a high standard due to the ‘hands-on’ approach we have here at Independent Institute. Students leave the course very capable & confident and are ready for employment in businesses such as bakeries, patisseries, commercial kitchens, restaurants and Cafes.

The product range includes:

  • Artisan breads, sourdoughs, baguettes, grain breads
  • Savoury pastries – pies, pasties, sausage rolls, quiches
  • Sweet pastries – danishes, croissants, apple turnovers
  • Cakes – Black forest, cheesecake, chocolate gateaux
  • Biscuits – melting moments, Anzac biscuits, chocolate chip cookies
  • Doughnuts, lamingtons, scones, muffins, buns … and many more!!

We consider theory to be important and relevant to learning, however we also ensure that time is spent on practical activities each day in order to build students confidence and hands-on skills. We get fantastic results from this approach and students appreciate the wide range of products they get the opportunity to make.
