Stephan Knoll taking notes at the AMIC Smallgoods CompetitionCees Wesselingh & Stephan Knoll  at the AMIC Smallgoods CompetitionRepresentatives from IIFP, Stephan Knoll and Cees Wesselingh, were asked to judge products at the AMIC (Australian Meat Industry Council) Smallgoods Competition on the 3rd July, and also at the AMIC Sausage King and the new Butcher’s Burger Competition on the 4th July.

The National Sausage King competition is held annually. It is co-ordinated and run by AMIC for the benefit of members. It brings butchers from different regions together allowing them to show off what they do best.

20140703-F13_2427The competition starts off at a regional level in New South Wales, Queensland, Victoria, South Australia, Tasmania and Western Australia before moving to the state finals and then the national final. The various levels of the competition gives winners, finalists and place-getters more opportunities to promote their business and gain extra sales.

The AMIC members’ state based Smallgoods Competitions provide Independent Local Butchers and specialist smallgoods manufacturers with the opportunity to showcase their expertise. The manufacture of smallgoods is a skillful process that demands strict adherence to food standards and hygiene as well as creating a flavoursome product.

20140703-F13_2455The Smallgoods Competition is run in Queensland, South Australia and Victoria. Butchers and Smallgoods makers in these states submit their entries in the annual Smallgoods Competition for tasting and judging. This event has become one of the most popular competitions of the year. Entrants’ best hams, cooked corned silverside, pre-cooked sausages, bacon, salamis, cold platters and other products are put forward for judging.
